🍽️ Fresh Cucumber Sandwiches with Herb Cream Cheese

Ingredients
- Loaf white bread (Each 1/2, approx. 200 g)
- Whole grain toast (Each 1/2, approx. 200 g)
- 300 g cream cheese
- Juice of one lime
- 1 tbsp lime zest
- 100 g whipping cream
- Cilantro (each 2 tbsp, finely chopped)
- Parsley (each 2 tbsp, finely chopped)
- Salt
- Pepper (from the mill)
- 1 cucumber
Instructions
- 1. Cut the bread slices into the desired shape.
- 2. Remove the hard crust from all bread slices.
- 3. Place the cream cheese base into a small bowl.
- 4. Squeeze the juice of half a lime into the bowl.
- 5. Grate the fine zest of half a lime directly into the mixture.
- 6. Add one tablespoon of cream.
- 7. Finely chop fresh herbs and add them.
- 8. Season the mixture with a pinch of salt.
- 9. Add freshly ground pepper to taste.
- 10. Stir all ingredients thoroughly with a spoon.
- 11. Rinse the cucumber under running water.
- 12. Dry the cucumber with a kitchen towel.
- 13. Slice the cucumber into paper-thin slices.
- 14. Gently mix the cucumber slices with the cream cheese mixture.
- 15. Take half of the prepared bread slices.
- 16. Spread the cucumber-cream cheese mixture evenly over these breads.
- 17. Place the remaining bread slices on top as lids.
- 18. Press the sandwiches together lightly so they hold.
- 19. Cut the sandwiches into bite-sized pieces.
