  1. 1. Wash the cucumbers thoroughly under running water.
  2. 2. Remove the hard ends of the cucumbers.
  3. 3. Slice each cucumber lengthwise into six even, long strips.
  4. 4. Lay the cucumber slices flat on your cutting board.
  5. 5. Grate the Pecorino cheese finely.
  6. 6. Mix the grated cheese with the yogurt and cream cheese.
  7. 7. Stir the mixture until smooth and free of lumps.
  8. 8. Season the cheese cream with salt and pepper to taste.
  9. 9. Spread the cheese mixture evenly over each cucumber slice.
  10. 10. Chop the olives and tomatoes into small pieces.
  11. 11. Wash the thyme sprigs under cold water.
  12. 12. Shake the thyme sprigs dry to remove excess water.
  13. 13. Cut off the bottom 12 millimeters of the thyme stems.
  14. 14. Place a portion of the chopped olives, tomatoes, and thyme on one end of each filled cucumber slice.
  15. 15. Roll the cucumber slices loosely starting from the filled end.
  16. 16. Arrange the finished rolls attractively on a serving plate.
