🍽️ Fresh Cucumber Rolls with Cream Cheese Filling

Ingredients
- 2 cucumbers
- 50 g Pecorino (1 piece)
- 100 g yogurt (1.5% fat)
- 250 g cream cheese
- salt
- pepper
- 100 g pitted black olives
- 100 g sun-dried tomatoes
- 0.5 bunch thyme
Instructions
- 1. Wash the cucumbers thoroughly under running water.
- 2. Remove the hard ends of the cucumbers.
- 3. Slice each cucumber lengthwise into six even, long strips.
- 4. Lay the cucumber slices flat on your cutting board.
- 5. Grate the Pecorino cheese finely.
- 6. Mix the grated cheese with the yogurt and cream cheese.
- 7. Stir the mixture until smooth and free of lumps.
- 8. Season the cheese cream with salt and pepper to taste.
- 9. Spread the cheese mixture evenly over each cucumber slice.
- 10. Chop the olives and tomatoes into small pieces.
- 11. Wash the thyme sprigs under cold water.
- 12. Shake the thyme sprigs dry to remove excess water.
- 13. Cut off the bottom 12 millimeters of the thyme stems.
- 14. Place a portion of the chopped olives, tomatoes, and thyme on one end of each filled cucumber slice.
- 15. Roll the cucumber slices loosely starting from the filled end.
- 16. Arrange the finished rolls attractively on a serving plate.
