🍽️ Beef Goulash in a Bread Roll

Ingredients
- 800 g beef goulash (e.g. from the shoulder)
- 2 onions
- 2 garlic cloves
- 2 tbsp rapeseed oil
- 1 tbsp tomato paste
- 100 ml dry red wine
- 600 ml meat broth
- 1 bay leaf
- 2 tsp organic lemon zest
- 0.5 tsp ground caraway
- 0.5 tsp dried marjoram
- 1 tbsp sweet paprika powder
- salt
- pepper (from the mill)
- 4 whole grain buns
- 100 g sour cream
Instructions
- 1. Rinse the beef under cold water and pat it dry with a kitchen towel.
- 2. Cut the meat into cubes of about 2 centimeters.
- 3. Peel the onions and the garlic.
- 4. Finely dice the onions and the garlic.
- 5. Heat the oil in a large pot.
- 6. Brown the meat cubes on all sides.
- 7. Add the diced onions and garlic to the pot.
- 8. Sauté the vegetables for 2 to 3 minutes.
- 9. Stir in the tomato paste and let it cook briefly.
- 10. Deglaze the mixture with red wine.
- 11. Pour in the beef broth.
- 12. Add the bay leaf to the pot.
- 13. Cover the pot halfway.
- 14. Simmer the goulash on low heat for 2 hours.
- 15. Add more broth if necessary, as the liquid evaporates too much.
- 16. Add the lemon zest, cumin, marjoram, and paprika powder in the last 20 minutes.
- 17. Season the goulash with salt and pepper to taste.
- 18. Cut off the top of each bread roll.
- 19. Hollow out the inside of the bread rolls.
- 20. Press the inner walls smooth.
- 21. Fill the hot goulash into the hollowed-out bread rolls.
- 22. Add a dollop of sour cream to each roll.
- 23. Sprinkle the goulash with some lemon zest and fresh marjoram.
- 24. Serve the rolls immediately.
