🍽️ Fresh Spelt Noodles from Scratch

Ingredients
- 100 g spelt flour Type 630
- 300 g spelt wholemeal flour
- 4 eggs
- 2 tbsp olive oil
- 0.5 tsp salt
Instructions
- 1. Add both types of flour, the eggs, the olive oil, and the salt to a bowl.
- 2. Add 3 to 4 tablespoons of water.
- 3. Knead the ingredients vigorously until you have a smooth and elastic dough.
- 4. If the dough seems too dry, add a little more water.
- 5. Shape the dough into a ball.
- 6. Store the dough ball in the refrigerator for at least 1 hour.
- 7. Take the dough out of the refrigerator and knead it briefly again.
- 8. Divide the dough into two to four equal pieces.
- 9. Shape each piece into a flat, rectangular plate.
- 10. Roll the dough plate through the pasta machine on the lowest setting once.
- 11. Fold the dough sheet together.
- 12. Roll the folded sheet through the machine on the lowest setting again.
- 13. Now roll the dough through each setting from 3 to 5 once to make it thin.
- 14. Lightly dust the dough with flour while rolling it.
- 15. Cut the thin dough sheets into pieces about 10 centimeters long.
- 16. Cut the pieces into tagliatelle or linguini.
- 17. Place the finished noodles on a board or plate dusted with flour.
- 18. Let the noodles dry for a short while.
- 19. Bring plenty of water with salt to a boil.
- 20. Cook the noodles for about 3 minutes.
- 21. Drain the noodles.
- 22. Serve the noodles immediately.
