  1. 1. Add both types of flour, the eggs, the olive oil, and the salt to a bowl.
  2. 2. Add 3 to 4 tablespoons of water.
  3. 3. Knead the ingredients vigorously until you have a smooth and elastic dough.
  4. 4. If the dough seems too dry, add a little more water.
  5. 5. Shape the dough into a ball.
  6. 6. Store the dough ball in the refrigerator for at least 1 hour.
  7. 7. Take the dough out of the refrigerator and knead it briefly again.
  8. 8. Divide the dough into two to four equal pieces.
  9. 9. Shape each piece into a flat, rectangular plate.
  10. 10. Roll the dough plate through the pasta machine on the lowest setting once.
  11. 11. Fold the dough sheet together.
  12. 12. Roll the folded sheet through the machine on the lowest setting again.
  13. 13. Now roll the dough through each setting from 3 to 5 once to make it thin.
  14. 14. Lightly dust the dough with flour while rolling it.
  15. 15. Cut the thin dough sheets into pieces about 10 centimeters long.
  16. 16. Cut the pieces into tagliatelle or linguini.
  17. 17. Place the finished noodles on a board or plate dusted with flour.
  18. 18. Let the noodles dry for a short while.
  19. 19. Bring plenty of water with salt to a boil.
  20. 20. Cook the noodles for about 3 minutes.
  21. 21. Drain the noodles.
  22. 22. Serve the noodles immediately.
