🍽️ Fresh Green Asparagus Salad

Ingredients
- 1 kg green asparagus
- salt
- 4 tbsp balsamic vinegar
- pepper (from the mill)
- 6 tbsp olive oil
- 1 tbsp small capers
- basil
- fine lemon zest strips
Instructions
- 1. Wash the asparagus thoroughly. Peel only the lower third of the stalks and trim off the woody ends.
- 2. Cook the asparagus in salted water for about 10 to 12 minutes until tender.
- 3. Whisk together vinegar, salt, pepper, and olive oil in a small bowl to make the dressing.
- 4. Drain the asparagus well and let it drip dry. Toss the warm vegetable immediately with the marinade. Serve the salad garnished with capers, fresh basil leaves, and thin strips of lemon zest.
