🍽️ Kale Patties with Caramelized Onions

Ingredients
- 3 slices whole wheat toast
- 150 ml milk
- 4 shallots
- 1 tsp butter
- 400 g kale
- salt
- 500 g mixed minced meat
- 1 egg
- pepper (from the mill)
- 1 pinch ground caraway
- 4 tbsp olive oil
- 1 tbsp olive oil
- 1 tbsp coarse mustard
- 150 ml vegetable broth
- 100 ml whipping cream
Instructions
- 1. Soak the toast slices in the lukewarm milk.
- 2. Peel the shallots. Dice one shallot very finely and slice the remaining shallots into thin rings. Sauté half of the fine shallot cubes in hot butter and remove the pan from the heat.
- 3. Wash the kale, remove the tough stems, and boil the leafy greens for about 8 minutes in boiling salted water (blanching). Drain the vegetables, shock them with cold water, squeeze them well, and chop them finely.
- 4. Mix the minced meat with the egg, the sautéed shallots, and the well-squeezed toast. Season the mixture generously with salt, pepper, and cumin, and knead in the kale. Form 8 small patties and fry them in 2 tablespoons of olive oil for about 4 minutes on each side.
- 5. Sauté the remaining shallot cubes in 1 tablespoon of oil. Stir in the mustard and deglaze with vegetable broth. Simmer the sauce for about 4 minutes, add the cream, and cook for another 5 minutes until thickened. Season with salt and pepper and blend the sauce until smooth.
- 6. Fry the shallot rings in the remaining oil until golden brown and place them on the patties. Serve the mustard sauce alongside and add mashed potatoes as a side dish if desired.
