🍽️ Crispy Kale with Feta, Raisins, and Shallots

Ingredients
- 400 g fresh, young kale
- salt
- 120 g feta
- 2 shallots
- 2 tbsp olive oil
- 100 g pine nuts
- 150 g sultanas
- 120 ml vegetable broth
- 2 tbsp balsamic vinegar
- pepper
Instructions
- 1. Wash the kale thoroughly and remove the tough stems.
- 2. Spin the greens dry.
- 3. Bring a pot of salted water to a boil.
- 4. Add the kale to the boiling water for 2 to 3 minutes (this is called blanching).
- 5. Drain the kale and immediately rinse it with cold water to stop the cooking process.
- 6. Let the vegetables drain well.
- 7. Roughly chop the kale.
- 8. Crumble the feta cheese into small pieces.
- 9. Peel the shallots and chop them finely.
- 10. Heat 2 tablespoons of olive oil in a pan.
- 11. Add the shallots, pine nuts, and sultanas (raisins) to the pan.
- 12. Sauté the mixture over medium heat until the shallots are soft and translucent.
- 13. Deglaze the pan with broth.
- 14. Stir in the vinegar.
- 15. Simmer the sauce over medium heat for 2 to 3 minutes.
- 16. Season the sauce with salt and pepper.
- 17. Remove the pan from the heat and let the mixture cool down.
- 18. Mix the kale with the feta cheese.
- 19. Divide the kale among plates.
- 20. Top with the cooled sultana mixture.
- 21. Serve the dish immediately.
