  1. 1. Wash the kale thoroughly and remove the tough stems.
  2. 2. Spin the greens dry.
  3. 3. Bring a pot of salted water to a boil.
  4. 4. Add the kale to the boiling water for 2 to 3 minutes (this is called blanching).
  5. 5. Drain the kale and immediately rinse it with cold water to stop the cooking process.
  6. 6. Let the vegetables drain well.
  7. 7. Roughly chop the kale.
  8. 8. Crumble the feta cheese into small pieces.
  9. 9. Peel the shallots and chop them finely.
  10. 10. Heat 2 tablespoons of olive oil in a pan.
  11. 11. Add the shallots, pine nuts, and sultanas (raisins) to the pan.
  12. 12. Sauté the mixture over medium heat until the shallots are soft and translucent.
  13. 13. Deglaze the pan with broth.
  14. 14. Stir in the vinegar.
  15. 15. Simmer the sauce over medium heat for 2 to 3 minutes.
  16. 16. Season the sauce with salt and pepper.
  17. 17. Remove the pan from the heat and let the mixture cool down.
  18. 18. Mix the kale with the feta cheese.
  19. 19. Divide the kale among plates.
  20. 20. Top with the cooled sultana mixture.
  21. 21. Serve the dish immediately.
