🍽️ Hearty Kale Stew with Sausage

Ingredients
- 1.5 kg kale
- 1 kg potatoes
- 2 onions
- 1 garlic clove
- 1 red chili pepper
- 3 allspice berries
- 4 peppercorns
- 2 tbsp sunflower oil
- salt
- 50 g rolled oats
- 500 ml vegetable broth
- 250 g Spanish chorizo (chorizo)
- 2 tsp mustard
- 2 tsp honey
Instructions
- 1. Strip the kale leaves from the tough stems.
- 2. Wash the leaves thoroughly under running water.
- 3. Place the wet kale into a large pot.
- 4. Cook the kale over medium heat for about 5 minutes, stirring occasionally, until it wilts.
- 5. Remove the kale from the pot and let it drain well.
- 6. Chop the drained kale into coarse pieces.
- 7. Peel the potatoes and wash them.
- 8. Cut the potatoes into small cubes.
- 9. Peel the onions and the garlic.
- 10. Slice the onions into thin rings.
- 11. Finely chop the garlic.
- 12. Wash the chili pepper.
- 13. Remove the stem and the white inner membranes of the chili.
- 14. Slice the chili into thin rings.
- 15. Crush the allspice berries and peppercorns in a mortar.
- 16. Heat the oil in a large pot.
- 17. Fry the onion rings and garlic in the hot oil.
- 18. Add the potato cubes, chopped kale, chili rings, ground spices, salt, and oat flakes to the pot.
- 19. Simmer the mixture for about 5 minutes.
- 20. Pour the vegetable broth into the pot.
- 21. Let the stew simmer covered for about 60 minutes.
- 22. Slice the paprika sausage.
- 23. Add the sausage slices to the stew about 20 minutes before the end of the cooking time.
