🍽️ Creamy Potato and Kale Mash with Poached Egg

Ingredients
- 600 g floury potatoes
- salt
- 4 spring onions
- 400 g kale
- 30 g butter
- 100 ml milk (3.5% fat) (warm)
- nutmeg
- pepper
- 3 tbsp white wine vinegar
- 4 eggs
Instructions
- 1. Peel the potatoes.
- 2. Place the peeled potatoes in a pot of boiling salted water.
- 3. Cook the potatoes for about 30 minutes until tender.
- 4. Wash the spring onions under running water.
- 5. Remove the dry ends of the spring onions.
- 6. Slice the spring onions into thin rings.
- 7. Wash the kale thoroughly.
- 8. Remove the tough stems from the kale.
- 9. Slice the kale leaves into thin strips.
- 10. Place the kale in the same pot of boiling salted water.
- 11. Cook the kale for about 10 minutes.
- 12. Remove the kale from the water using a slotted spoon.
- 13. Let the kale drain.
- 14. Drain the cooking water from the potatoes.
- 15. Mash the potatoes into a puree using a fork or a potato masher.
- 16. Let the potato mash steam for a short moment.
- 17. Melt half of the butter in a large pot.
- 18. Add the sliced spring onions to the melted butter.
- 19. Add the drained kale to the pot.
- 20. Sauté the onions and kale over medium heat for about 3 minutes.
- 21. Stir the remaining butter into the vegetable mixture.
- 22. Combine the vegetable-butter mixture with the potato mash.
- 23. Add milk gradually until the mash has a creamy consistency.
- 24. Grate some fresh nutmeg over the mash.
- 25. Season the mash with salt and pepper.
- 26. Keep the potato mash warm.
- 27. Fill a large pot with about 1 liter of water.
- 28. Add vinegar to the water in the pot.
- 29. Bring the water-vinegar mixture to a boil.
- 30. Reduce the heat so that the water is just simmering.
- 31. Crack an egg into a small cup.
- 32. Gently slide the egg from the cup into the simmering water.
- 33. Poach the egg for 4 to 5 minutes.
- 34. Repeat steps 31 to 33 for the remaining eggs.
- 35. Divide the warm potato mash among four plates.
- 36. Place one poached egg on each plate with potato mash.
- 37. Season the eggs with a little pepper to finish.
