  1. 1. Peel the potatoes.
  2. 2. Place the peeled potatoes in a pot of boiling salted water.
  3. 3. Cook the potatoes for about 30 minutes until tender.
  4. 4. Wash the spring onions under running water.
  5. 5. Remove the dry ends of the spring onions.
  6. 6. Slice the spring onions into thin rings.
  7. 7. Wash the kale thoroughly.
  8. 8. Remove the tough stems from the kale.
  9. 9. Slice the kale leaves into thin strips.
  10. 10. Place the kale in the same pot of boiling salted water.
  11. 11. Cook the kale for about 10 minutes.
  12. 12. Remove the kale from the water using a slotted spoon.
  13. 13. Let the kale drain.
  14. 14. Drain the cooking water from the potatoes.
  15. 15. Mash the potatoes into a puree using a fork or a potato masher.
  16. 16. Let the potato mash steam for a short moment.
  17. 17. Melt half of the butter in a large pot.
  18. 18. Add the sliced spring onions to the melted butter.
  19. 19. Add the drained kale to the pot.
  20. 20. Sauté the onions and kale over medium heat for about 3 minutes.
  21. 21. Stir the remaining butter into the vegetable mixture.
  22. 22. Combine the vegetable-butter mixture with the potato mash.
  23. 23. Add milk gradually until the mash has a creamy consistency.
  24. 24. Grate some fresh nutmeg over the mash.
  25. 25. Season the mash with salt and pepper.
  26. 26. Keep the potato mash warm.
  27. 27. Fill a large pot with about 1 liter of water.
  28. 28. Add vinegar to the water in the pot.
  29. 29. Bring the water-vinegar mixture to a boil.
  30. 30. Reduce the heat so that the water is just simmering.
  31. 31. Crack an egg into a small cup.
  32. 32. Gently slide the egg from the cup into the simmering water.
  33. 33. Poach the egg for 4 to 5 minutes.
  34. 34. Repeat steps 31 to 33 for the remaining eggs.
  35. 35. Divide the warm potato mash among four plates.
  36. 36. Place one poached egg on each plate with potato mash.
  37. 37. Season the eggs with a little pepper to finish.
