🍽️ Crunchy Green Barley Patties

Ingredients
- 1 onion
- 1 tsp butter
- 50 g green barley groats
- 500 ml vegetable broth
- 150 g frozen peas
- 2 carrots
- 2 tbsp hearty oat flakes
- 2 tbsp delicate oat flakes
- 2 tbsp sunflower seeds
- pepper
- salt
- herbs (to taste)
- peanut oil (for frying)
Instructions
- 1. Peel the onion and chop it very finely.
- 2. Heat the butter in a pot.
- 3. Sauté the chopped onion in the hot butter.
- 4. Add the green barley groats and toast them briefly.
- 5. Deglaze the mixture with the broth.
- 6. Let the mixture boil for 5 minutes.
- 7. Remove the pot from the heat.
- 8. Let the groats swell for 10 minutes.
- 9. Drain any remaining cooking liquid.
- 10. Let the green barley cool down completely.
- 11. Cook the peas until tender-crisp according to package instructions.
- 12. Drain the peas.
- 13. Shock the peas with cold water.
- 14. Let the peas cool down.
- 15. Peel the carrots.
- 16. Grate the carrots finely.
- 17. Mix the cooled groats with the peas.
- 18. Add the grated carrots.
- 19. Add the oat flakes.
- 20. Add the sunflower seeds.
- 21. Knead everything into a firm dough.
- 22. Season the dough to your liking.
- 23. Wash the herbs.
- 24. Spin the herbs dry.
- 25. Chop the herbs finely.
- 26. Fold the herbs into the green barley dough.
- 27. Brush a non-stick pan with oil.
- 28. Heat the pan.
- 29. Shape the dough into patties using your hands.
- 30. Fry the patties in the pan.
- 31. Fry them until golden brown on both sides.
