🍽️ Hearty Green Barley Stew with Chard and Potatoes

Ingredients
- 2 Onions
- 30 g Butter
- 100 g Green Barley
- 2 Bay Leaves
- 1 l Vegetable Broth
- 300 g Potatoes
- 300 g Carrots
- 1 Stalk Celery
- 150 g Chard
- Salt
- Pepper
- 1 Pinch Nutmeg
Instructions
- 1. Preheat a large pot on the stove.
- 2. Peel the onion and cut it into small cubes.
- 3. Add the cooking fat to the hot pot.
- 4. Sauté the onion cubes until soft, but do not brown them.
- 5. Add the green barley and sauté it briefly until it looks slightly translucent.
- 6. Deglaze the mixture with the broth.
- 7. Add the bay leaves to the soup.
- 8. Let everything simmer for 10 minutes.
- 9. Thoroughly wash the potatoes and vegetables.
- 10. Remove any inedible parts from the ingredients.
- 11. Cut the potatoes and vegetables (except the chard) into small pieces.
- 12. Add the cut potatoes and vegetables to the broth.
- 13. Let the stew cook for another 20 minutes.
- 14. Chop the chard.
- 15. Add the chard to the pot 5 minutes before the cooking time ends.
- 16. Let the chard cook along with the rest of the stew.
- 17. Remove the bay leaves from the soup.
- 18. Season the stew with salt, pepper, and nutmeg to taste.
- 19. Portion the soup into small bowls.
- 20. Serve the stew hot.
