🍽️ Grünkern Patties with Orange Cream and Potato Dumplings

Ingredients
- 1 package potato dumplings from EDEN (2 x 4 dumplings; available at Reformhaus® ())
- 2 onions
- 1 carrot
- 1 package Veggie Green Wheat Burger from Bauck (160 g; available at Reformhaus® ())
- 2 garlic cloves
- 5 tbsp olive oil from Dr. Budwig (available at Reformhaus®)
- 200 ml orange juice from Voelkel (available at Reformhaus®)
- 1 tbsp Vitam-R yeast extract Classic (available at Reformhaus® ())
- herb salt from Brecht (available at Reformhaus®)
- pepper from Brecht (available at Reformhaus®)
- 1 tbsp cornstarch from Bauck (available at Reformhaus®)
- 0.5 bunch parsley (10 g)
Instructions
- 1. Put the potato dumpling flour into a bowl.
- 2. Mix it with cold water as described on the package.
- 3. Let the mixture rest for 15 minutes.
- 4. Peel one onion.
- 5. Dice it finely.
- 6. Peel a carrot.
- 7. Grate it coarsely using a kitchen grater.
- 8. Put the grünkern burger mix into a bowl.
- 9. Add the diced onion.
- 10. Add the grated carrot.
- 11. Pour 250 milliliters of boiling water over everything as indicated on the package.
- 12. Stir the mixture well.
- 13. Let the mixture swell for about 10 minutes.
- 14. Peel the remaining onion.
- 15. Peel a garlic clove.
- 16. Dice the onion and garlic.
- 17. Heat olive oil in a pan.
- 18. Sauté the vegetables over high heat for 2 minutes.
- 19. Deglaze with orange juice.
- 20. Add 200 milliliters of water.
- 21. Bring the liquid to a boil for 3 minutes over high heat.
- 22. Stir in Vitam R.
- 23. Season with herb salt.
- 24. Season with pepper.
- 25. Transfer the mixture to a tall container.
- 26. Blend it finely with an immersion blender.
- 27. Return the sauce to the pan.
- 28. Bring it to a boil again.
- 29. Mix cornstarch with 5 tablespoons of cold water in a small bowl.
- 30. Stir the starch mixture into the sauce.
- 31. Let the sauce become creamy.
- 32. Remove the pan from the heat.
- 33. Set it aside.
- 34. Wet your hands with water.
- 35. Shape 8 dumplings from the potato mixture.
- 36. Carefully place them in a large pot of hot water.
- 37. Let the dumplings cook over low heat.
- 38. Cook them for about 20 minutes as indicated on the package.
- 39. Wet your hands again with water.
- 40. Shape 4 to 8 patties from the grünkern burger mixture.
- 41. Heat 3 tablespoons of olive oil in a large pan.
- 42. Fry the patties on both sides until golden brown.
- 43. Wash the parsley.
- 44. Shake it dry.
- 45. Chop it finely.
- 46. Plate 2 potato dumplings on a plate each.
- 47. Add 1 to 2 grünkern patties.
- 48. Drizzle the dish with the sauce.
- 49. Sprinkle it with the parsley.
- 50. Serve the dish.
