🍽️ Fresh Basil and Almond Pesto

Ingredients
- 2 handfuls Basil
- 40 g peeled almond kernels
- 2 Garlic cloves
- 120 ml Olive oil
- 30 g freshly grated Parmesan
- Salt
- Pepper (from the mill)
- Lemon juice
Instructions
- 1. Rinse the basil thoroughly under running water.
- 2. Shake it dry so that no water droplets remain.
- 3. Carefully pluck the leaves from the stems.
- 4. Heat a pan without adding oil or butter.
- 5. Toast the almonds in the hot pan for a short time.
- 6. Remove the almonds from the pan.
- 7. Let the toasted almonds cool down completely.
- 8. Peel the skin off the garlic clove.
- 9. Put the garlic, basil, and cooled almonds into a blender.
- 10. Blend the ingredients into a fine paste.
- 11. Pour the oil in a thin stream.
- 12. Continue mixing until the pesto becomes creamy and thick.
- 13. Stir the Parmesan into the mixture.
- 14. Season the pesto with salt to taste.
- 15. Add fresh pepper.
- 16. Add a splash of lemon juice.
- 17. Taste the pesto and adjust the seasoning if necessary.
