🍽️ Grilled Vegetables in Foil

Ingredients
- 300 g broccoli
- 2 zucchini
- 300 g green asparagus
- 300 g snow peas
- 1 bunch spring onions
- 6 shallots
- 1 tbsp green pickled peppercorns
- 2 bunch arugula
- salt
- pepper
- 2 garlic cloves
- 8 tbsp olive oil
Instructions
- 1. Wash the broccoli and divide it into small florets. Cut off the tough lower parts of the stems.
- 2. Wash the snow peas and remove the tough ends.
- 3. Wash the spring onions, cut off the ends, and cut them into coarse pieces.
- 4. Wash the asparagus and cut off the woody ends.
- 5. Peel the shallots and halve them.
- 6. Wash the zucchini and slice it into thick rounds.
- 7. Bring a pot of salted water to a boil.
- 8. Cook the broccoli, snow peas, and asparagus one after the other for 3 minutes in the boiling water.
- 9. Remove the vegetables from the water and immediately shock them in ice-cold water to stop the cooking process.
- 10. Let the vegetables drain well.
- 11. Cut four large pieces of heavy-duty aluminum foil.
- 12. Mix the prepared vegetables in a bowl.
- 13. Divide the vegetables into four equal portions.
- 14. Wash the arugula.
- 15. Distribute the arugula and peppercorns over the vegetables on the foil pieces.
- 16. Whisk olive oil with salt, pepper, and pressed garlic.
- 17. Drizzle the oil mixture over the vegetables.
- 18. Seal the foil packages well.
- 19. Place the packages on the hot grill.
- 20. Let the vegetables cook in the foil for 10 minutes.
- 21. Serve the vegetables directly in the foil.
