🍽️ Fresh Green Fish Curry with Rice

Ingredients
- 200 g basmati brown rice
- salt
- 600 g white fish fillet (e.g. cod, pollock)
- 1 onion
- 1 garlic clove
- 10 g ginger (1 piece)
- 1 green chili pepper
- 200 g snow peas
- 2 tbsp peanut oil
- 2 tbsp green curry paste
- 400 ml coconut milk
- 200 ml vegetable broth
- 0.5 red chili pepper
- 1 handful cilantro
- 1 tbsp fish sauce
- pepper
Instructions
- 1. Bring three and a half times the volume of salted water to a boil.
- 2. Add the rice and cook it for about 30 to 35 minutes until tender.
- 3. Rinse the fish fillets under cold water.
- 4. Pat the fish dry with a kitchen towel.
- 5. Cut the fish into cubes of about 2.5 to 3 centimeters.
- 6. Peel the onion, garlic, and ginger.
- 7. Dice the onion, garlic, and ginger finely.
- 8. Cut the green chili pepper in half lengthwise.
- 9. Remove the seeds from the chili pepper.
- 10. Rinse the deseeded chili pepper.
- 11. Finely chop the green chili pepper.
- 12. Remove the tough ends of the snow peas.
- 13. Wash the snow peas thoroughly.
- 14. Heat oil in a wok or a large frying pan.
- 15. Add the onion, garlic, ginger, and green chili to the pan.
- 16. Sauté the vegetables for 4 minutes over medium heat, stirring constantly.
- 17. Stir the curry paste into the vegetables.
- 18. Fry the curry paste for 2 minutes, stirring constantly.
- 19. Deglaze the pan with coconut milk and broth.
- 20. Add the snow peas and fish cubes to the sauce.
- 21. Let the curry simmer for 4 minutes over low heat.
- 22. Cut the red chili pepper in half lengthwise.
- 23. Rinse the red chili pepper.
- 24. Slice the red chili pepper into thin rings.
- 25. Remove the seeds of the red chili if desired.
- 26. Wash the coriander thoroughly.
- 27. Shake the coriander dry.
- 28. Finely chop the coriander.
- 29. Season the curry with fish sauce, salt, and pepper.
- 30. Sprinkle the curry with the chili rings and chopped coriander.
- 31. Serve the curry together with the rice.
