  3. 3. Rinse the fish fillets under cold water.
  4. 4. Pat the fish dry with a kitchen towel.
  5. 5. Cut the fish into cubes of about 2.5 to 3 centimeters.
  6. 6. Peel the onion, garlic, and ginger.
  7. 7. Dice the onion, garlic, and ginger finely.
  8. 8. Cut the green chili pepper in half lengthwise.
  9. 9. Remove the seeds from the chili pepper.
  10. 10. Rinse the deseeded chili pepper.
  11. 11. Finely chop the green chili pepper.
  12. 12. Remove the tough ends of the snow peas.
  13. 13. Wash the snow peas thoroughly.
  14. 14. Heat oil in a wok or a large frying pan.
  15. 15. Add the onion, garlic, ginger, and green chili to the pan.
  16. 16. Sauté the vegetables for 4 minutes over medium heat, stirring constantly.
  17. 17. Stir the curry paste into the vegetables.
  18. 18. Fry the curry paste for 2 minutes, stirring constantly.
  19. 19. Deglaze the pan with coconut milk and broth.
  20. 20. Add the snow peas and fish cubes to the sauce.

  24. 24. Slice the red chili pepper into thin rings.

  26. 26. Wash the coriander thoroughly.
  27. 27. Shake the coriander dry.
  28. 28. Finely chop the coriander.
  29. 29. Season the curry with fish sauce, salt, and pepper.
  30. 30. Sprinkle the curry with the chili rings and chopped coriander.
  31. 31. Serve the curry together with the rice.
