  1. 1. Thoroughly wash the green tomatoes under running water.
  2. 2. Remove the hard stem ends from the tomatoes.
  3. 3. Slice the tomatoes into even rounds.
  4. 4. Slice the cheese into thin pieces.
  5. 5. Peel the onion and remove the outer layers.
  6. 6. Halve the onion through the center.
  7. 7. Cut the onion halves into very fine strips.
  8. 8. Place one tomato slice on each of four plates.
  9. 9. Place a cheese slice directly next to or slightly overlapping the tomato.
  10. 10. Repeat the pattern with alternating tomato and cheese slices.
  11. 11. Arrange the slices so that they overlap like roof tiles.
  12. 12. Sprinkle the fine onion strips evenly over the salad.
  13. 13. Drizzle some oil over each plate.
  14. 14. Add some balsamic vinegar.
  15. 15. Season the salad with a pinch of salt.
  16. 16. Add freshly ground pepper to taste.
