  1. 1. Wash the asparagus thoroughly and trim off the woody ends. Bring water with salt and a pinch of sugar to a boil and cook the asparagus for about 12 minutes. Remove, drain, and optionally roll in sesame seeds.
  2. 2. Whisk lemon juice and egg yolks in a water bath with a whisk until creamy. Slowly stir in the melted butter drop by drop until the sauce thickens. Season with salt and pepper. Fold the sour cream into the lukewarm sauce.
  3. 3. Serve the green asparagus with the lemon sauce in glasses and garnish with cress.
