🍽️ Green Asparagus with Lemon Cream

Ingredients
- 2 kg asparagus
- lemons (juice)
- sugar
- 2 egg yolks
- 125 g butter
- 150 g sour cream
- salt
- pepper
- 2 tsp sesame
- 0.5 handful cress
Instructions
- 1. Wash the asparagus thoroughly and trim off the woody ends. Bring water with salt and a pinch of sugar to a boil and cook the asparagus for about 12 minutes. Remove, drain, and optionally roll in sesame seeds.
- 2. Whisk lemon juice and egg yolks in a water bath with a whisk until creamy. Slowly stir in the melted butter drop by drop until the sauce thickens. Season with salt and pepper. Fold the sour cream into the lukewarm sauce.
- 3. Serve the green asparagus with the lemon sauce in glasses and garnish with cress.
