🍽️ Green Asparagus with Hollandaise Sauce

Ingredients
- 800 g green asparagus
- 200 g Parma ham (in thin slices)
- salt
- 2 tbsp lemon juice
- 250 g butter
- 2 egg yolks
- 4 tbsp dry white wine
- 2 tbsp lemon juice
- salt
- white pepper (from the mill)
- 2 tsp chive rings
Instructions
- 1. Thoroughly wash the green asparagus under running water.
- 2. Peel the bottom third of the asparagus spears with a vegetable peeler.
- 3. Trim off the woody ends of the asparagus spears.
- 4. Bring water to a boil and add some salt and lemon juice.
- 5. Cook the asparagus in the boiling water for about 12 minutes.
- 6. Melt the butter in a small saucepan.
- 7. Skim off the white foam from the surface of the melted butter.
- 8. Place the egg yolk and wine in a metal bowl.
- 9. Place the metal bowl over a pot of hot water (bain-marie).
- 10. Whisk the egg mixture in the hot water bath until frothy.
- 11. Add the butter drop by drop while stirring constantly.
- 12. Then add the remaining butter in a thin stream.
- 13. Continue stirring until a creamy sauce forms.
- 14. Make sure the egg mixture does not curdle.
- 15. Season the sauce with some lemon juice, salt, and pepper.
- 16. Lift the asparagus out of the cooking water.
- 17. Let the asparagus drain well.
- 18. Place the asparagus on plates and add Parma ham.
- 19. Serve the Hollandaise sauce separately.
- 20. Sprinkle the sauce with fine chive rings.
