  1. 1. Thoroughly wash the green asparagus under running water.
  2. 2. Peel the bottom third of the asparagus spears with a vegetable peeler.
  3. 3. Trim off the woody ends of the asparagus spears.
  4. 4. Bring water to a boil and add some salt and lemon juice.
  5. 5. Cook the asparagus in the boiling water for about 12 minutes.
  6. 6. Melt the butter in a small saucepan.
  7. 7. Skim off the white foam from the surface of the melted butter.
  8. 8. Place the egg yolk and wine in a metal bowl.
  9. 9. Place the metal bowl over a pot of hot water (bain-marie).
  10. 10. Whisk the egg mixture in the hot water bath until frothy.
  11. 11. Add the butter drop by drop while stirring constantly.
  12. 12. Then add the remaining butter in a thin stream.
  13. 13. Continue stirring until a creamy sauce forms.
  14. 14. Make sure the egg mixture does not curdle.
  15. 15. Season the sauce with some lemon juice, salt, and pepper.
  16. 16. Lift the asparagus out of the cooking water.
  17. 17. Let the asparagus drain well.
  18. 18. Place the asparagus on plates and add Parma ham.
  19. 19. Serve the Hollandaise sauce separately.
  20. 20. Sprinkle the sauce with fine chive rings.
