Ingredients
- 1 kg asparagus
- salt
- 50 g butter
- 4 eggs
- pepper (from the mill)
- basil
Instructions
- 1. Wash the green asparagus thoroughly.
- 2. Peel the lower part of the asparagus up to about halfway.
- 3. Cut off the woody ends of the asparagus stalks.
- 4. Fill a pot with water and add some salt and a piece of butter.
- 5. Bring the water to a boil.
- 6. Add the asparagus to the boiling water.
- 7. Cook the asparagus for about 12 to 15 minutes until tender.
- 8. Whisk the eggs in a bowl.
- 9. Add one tablespoon of water and a pinch of salt to the eggs.
- 10. Mix the mixture well with a fork or a whisk.
- 11. Heat the remaining butter in a frying pan.
- 12. Pour the egg mixture into the hot pan.
- 13. Let the eggs set briefly until they start to firm up.
- 14. Stir the eggs constantly until they are creamy.
- 15. Remove the asparagus from the water with a slotted spoon.
- 16. Let the asparagus drain briefly.
- 17. Place the asparagus on a plate.
- 18. Place the scrambled eggs next to the asparagus.
- 19. Season the dish freshly with ground pepper.
- 20. Garnish the dish with fresh basil leaves.
- 21. Serve the dish immediately while warm.
