🍽️ Pan-fried green asparagus with radishes

Ingredients
- 500 g green asparagus
- 250 g radishes (with greens)
- 1 herbs (e.g. wild garlic, arugula, borage)
- 3 spring onions
- 25 g pine nuts
- 2 tbsp rapeseed oil
- salt
- pepper (from the mill)
Instructions
- 1. Wash the asparagus thoroughly.
- 2. Peel the bottom third of the stalks.
- 3. Cut off the tough ends.
- 4. Cut the stalks into pieces about 5 centimeters long.
- 5. Cut the greens off the radishes.
- 6. Wash the radish leaves thoroughly.
- 7. Shake the leaves dry.
- 8. Chop the radish leaves coarsely.
- 9. Set aside the chopped leaves.
- 10. Wash the radishes.
- 11. Remove the tough remnants of the stem bases.
- 12. Quarter the radishes.
- 13. Rinse the herbs.
- 14. Shake the herbs dry.
- 15. Chop the herbs.
- 16. Add the chopped herbs to the radish leaves.
- 17. Wash the spring onions.
- 18. Remove the dry tips and roots.
- 19. Slice the spring onions into thin rings.
- 20. Roast the pine nuts in a pan or wok without fat.
- 21. Roast them until they are light brown.
- 22. Remove the pine nuts from the pan.
- 23. Add the oil to the pan.
- 24. Fry the asparagus in it while stirring.
- 25. Fry the asparagus for 3 to 4 minutes.
- 26. Add the radishes and spring onions.
- 27. Continue frying everything for 2 to 3 minutes.
- 28. Fold in the herbs.
- 29. Fry the herbs briefly.
- 30. Check if the asparagus is cooked.
- 31. It should still have a bite.
- 32. Season everything generously with salt and pepper.
- 33. Sprinkle the dish with the pine nuts.
- 34. Serve the dish.
