  6. 6. Season the sauce with salt, pepper, nutmeg, and wine.
  7. 7. Keep the sauce warm.
  8. 8. Wash the asparagus thoroughly.
  9. 9. Cut off the woody ends of the asparagus.
  10. 10. Boil the asparagus in salted water for 10 to 12 minutes.
  11. 11. Pour boiling water over the tomatoes briefly (blanch).
  12. 12. Shock the tomatoes with cold water.
  13. 13. Peel the skin off the tomatoes.
  14. 14. Halve the tomatoes.
  15. 15. Remove the seeds from the tomatoes.
  16. 16. Dice the tomatoes finely.

  19. 19. Pluck the leaves from the chervil.
