🍽️ Green Asparagus with Cheese Sauce

Ingredients
- 1 tbsp Butter
- 2 tsp Flour
- 250 ml Milk
- 80 g Cream Cheese
- Salt, Pepper from the mill
- 1 pinch Grated Nutmeg
- 3 tbsp Dry White Wine
- 2 kg Green Asparagus
- 2 Tomatoes
- 1 Chervil
Instructions
- 1. Heat the butter in a pot.
- 2. Stir the flour into the hot butter and let it cook briefly.
- 3. Pour in the milk while stirring continuously.
- 4. Let the sauce come to a slow boil.
- 5. Stir the cheese into the sauce until it has melted.
- 6. Season the sauce with salt, pepper, nutmeg, and wine.
- 7. Keep the sauce warm.
- 8. Wash the asparagus thoroughly.
- 9. Cut off the woody ends of the asparagus.
- 10. Boil the asparagus in salted water for 10 to 12 minutes.
- 11. Pour boiling water over the tomatoes briefly (blanch).
- 12. Shock the tomatoes with cold water.
- 13. Peel the skin off the tomatoes.
- 14. Halve the tomatoes.
- 15. Remove the seeds from the tomatoes.
- 16. Dice the tomatoes finely.
- 17. Pour boiling water over the chervil briefly.
- 18. Shake the chervil dry.
- 19. Pluck the leaves from the chervil.
- 20. Chop the chervil coarsely.
- 21. Drain the cooked asparagus.
- 22. Plate the green asparagus.
- 23. Pour the cheese sauce over the asparagus.
- 24. Distribute the tomato cubes on the plate.
- 25. Serve the chopped chervil alongside.
