🍽️ Tender Chicken with Green Asparagus

Ingredients
- 400 g green asparagus
- 2 tbsp olive oil
- 2 chicken breast fillets
- 0.5 l water
- 0.2 l white wine
- 2 nectarines
- 1 tbsp mustard seeds
- 1 tbsp honey
- sea salt (pepper)
- 2 tbsp poultry broth
- 2 tbsp white wine vinegar
- 50 g pecans
Instructions
- 1. Place the chicken breast fillets in a pan.
- 2. Pour in white wine and water.
- 3. Cook the meat over low heat until it is fully cooked through.
- 4. Peel the lower half of the green asparagus spears.
- 5. Cut the asparagus lengthwise into two halves.
- 6. Heat some olive oil in a pan.
- 7. Sauté the asparagus together with mustard seeds in the oil until tender.
- 8. Deglaze the pan with broth.
- 9. Remove the pan from the heat.
- 10. Stir in vinegar, honey, salt, and pepper.
- 11. Pit the nectarines.
- 12. Cut the nectarines into quarters.
- 13. Add the nectarine quarters and the nuts to the pan.
- 14. Cover the pan.
- 15. Let the mixture marinate for at least 30 minutes.
- 16. Cut the warm chicken fillets into bite-sized pieces.
- 17. Gently fold the chicken pieces into the asparagus mixture.
- 18. Season the dish with salt and pepper to taste.
- 19. Serve the food in small bowls.
