Ingredients
- 1 kg green asparagus
- Olive oil (extra virgin)
- Balsamic vinegar (di Modena)
- Salt
- Pepper (freshly ground)
- 4 hard-boiled eggs
- 1 handful arugula
Instructions
- 1. Wash the green asparagus thoroughly.
- 2. Cut off the woody lower ends.
- 3. Cook the asparagus in plenty of salted water for 10 to 12 minutes.
- 4. Let the asparagus drain well.
- 5. Halve the asparagus spears lengthwise.
- 6. Distribute the asparagus onto four plates.
- 7. Whisk 8 tablespoons of olive oil with 4 tablespoons of balsamic vinegar.
- 8. Season the mixture with salt and pepper.
- 9. Whisk the vinaigrette vigorously until well combined.
- 10. Drizzle the dressing over the asparagus tablespoon by tablespoon.
- 11. Wash the arugula thoroughly.
- 12. Remove tough stems and damaged leaves from the arugula.
- 13. Gently dry the arugula with a kitchen towel.
- 14. Distribute the arugula over the asparagus.
- 15. Peel the boiled eggs.
- 16. Chop the eggs as finely as possible.
- 17. Sprinkle the chopped eggs over the portions.
- 18. Serve the dish immediately.
- 19. Serve with fresh, crispy white bread.
