🍽️ Crispy Green Asparagus Rolls

Ingredients
- 600 g green asparagus (16 stalks)
- 0.5 lemon
- salt
- 1 tsp honey
- 30 g Grana Padano (1 piece)
- 30 g yogurt butter
- 150 g filo pastry (sheets)
- 150 g turkey ham (in thin slices)
- 1 tbsp sesame seeds (to taste)
Instructions
- 1. Thoroughly wash the green asparagus under running water.
- 2. Peel the bottom third of the stalks using a vegetable peeler.
- 3. Trim off the woody ends of the asparagus stalks generously.
- 4. Squeeze a lemon and pour the juice into a wide pot.
- 5. Add salt and honey to the pot with the lemon juice.
- 6. Fill the pot with plenty of water and bring the mixture to a boil.
- 7. Add the prepared asparagus to the boiling water.
- 8. Cook the asparagus for 5 to 6 minutes until tender.
- 9. Drain the asparagus and immediately shock it with cold water.
- 10. Let the asparagus drain well in a large colander.
- 11. Grate the cheese coarsely using a grater.
- 12. Melt the butter in a small saucepan over low heat.
- 13. Carefully unfold the filo pastry sheets.
- 14. Cut the pastry sheets into 16 rectangles using kitchen scissors.
- 15. Ensure each rectangle is approximately 8 x 10 cm in size.
- 16. Brush the pastry pieces thinly with the melted butter.
- 17. Place one slice of ham on a piece of pastry.
- 18. Place one asparagus stalk on top of the ham slice.
- 19. Sprinkle some grated cheese over the asparagus.
- 20. Roll the pastry tightly so that the asparagus tip remains visible.
- 21. Line a baking tray with baking paper.
- 22. Place the pastry parcels side by side on the tray.
- 23. Brush the parcels thinly with the remaining butter.
- 24. Sprinkle sesame seeds over the parcels as desired.
- 25. Preheat the oven to 200 °C (fan 180 °C, gas mark 3).
- 26. Bake the rolls on the middle rack for 12 to 15 minutes until golden brown.
- 27. Remove the rolls from the oven and serve them immediately.
