  1. 1. Thoroughly wash the green asparagus under running water.
  2. 2. Peel the bottom third of the stalks using a vegetable peeler.
  3. 3. Trim off the woody ends of the asparagus stalks generously.
  4. 4. Squeeze a lemon and pour the juice into a wide pot.
  5. 5. Add salt and honey to the pot with the lemon juice.
  6. 6. Fill the pot with plenty of water and bring the mixture to a boil.
  7. 7. Add the prepared asparagus to the boiling water.
  8. 8. Cook the asparagus for 5 to 6 minutes until tender.
  9. 9. Drain the asparagus and immediately shock it with cold water.
  10. 10. Let the asparagus drain well in a large colander.
  11. 11. Grate the cheese coarsely using a grater.
  12. 12. Melt the butter in a small saucepan over low heat.
  13. 13. Carefully unfold the filo pastry sheets.
  14. 14. Cut the pastry sheets into 16 rectangles using kitchen scissors.
  15. 15. Ensure each rectangle is approximately 8 x 10 cm in size.
  16. 16. Brush the pastry pieces thinly with the melted butter.
  17. 17. Place one slice of ham on a piece of pastry.
  18. 18. Place one asparagus stalk on top of the ham slice.
  19. 19. Sprinkle some grated cheese over the asparagus.
  20. 20. Roll the pastry tightly so that the asparagus tip remains visible.
  21. 21. Line a baking tray with baking paper.
  22. 22. Place the pastry parcels side by side on the tray.
  23. 23. Brush the parcels thinly with the remaining butter.
  24. 24. Sprinkle sesame seeds over the parcels as desired.
  25. 25. Preheat the oven to 200 °C (fan 180 °C, gas mark 3).
  26. 26. Bake the rolls on the middle rack for 12 to 15 minutes until golden brown.
  27. 27. Remove the rolls from the oven and serve them immediately.
