  2. 2. Let the asparagus drain well in a colander.
  3. 3. Peel the lower two-thirds of the asparagus stalks with a vegetable peeler.
  4. 4. Cut off the woody ends of the asparagus stalks.
  5. 5. Heat olive oil in a large non-stick pan.
  6. 6. Place the asparagus stalks into the hot pan.
  7. 7. Fry the asparagus for about 10 minutes over medium heat.
  8. 8. Turn the asparagus occasionally so it cooks evenly.
  9. 9. Season the asparagus with salt and coconut blossom sugar.
  10. 10. Crack the eggs into a small bowl.
  11. 11. Add ajwar (a roasted pepper paste) and a pinch of salt to the eggs.
  12. 12. Whisk the mixture thoroughly with a fork or whisk.
  13. 13. Heat a small non-stick pan.
  14. 14. Pour the egg mixture into the hot pan.
  15. 15. Cook the eggs over low heat for 3 to 5 minutes.
  16. 16. Push the eggs together from the outside in with a spatula until they set.
  17. 17. Cut the chicken breast into strips about 1 cm wide.
  18. 18. Finally season the fried asparagus with salt and pepper.
  19. 19. Plate the asparagus.
  20. 20. Add the scrambled eggs and chicken breast strips.
  21. 21. Serve the dish immediately.
