🍽️ Green Asparagus with Chicken Breast

Ingredients
- 500 g green asparagus
- 1 tbsp olive oil
- salt
- 1 pinch coconut blossom sugar
- 4 eggs
- 2 tbsp ajvar
- 120 g smoked chicken breast slices
- pepper
Instructions
- 1. Thoroughly wash the green asparagus under running water.
- 2. Let the asparagus drain well in a colander.
- 3. Peel the lower two-thirds of the asparagus stalks with a vegetable peeler.
- 4. Cut off the woody ends of the asparagus stalks.
- 5. Heat olive oil in a large non-stick pan.
- 6. Place the asparagus stalks into the hot pan.
- 7. Fry the asparagus for about 10 minutes over medium heat.
- 8. Turn the asparagus occasionally so it cooks evenly.
- 9. Season the asparagus with salt and coconut blossom sugar.
- 10. Crack the eggs into a small bowl.
- 11. Add ajwar (a roasted pepper paste) and a pinch of salt to the eggs.
- 12. Whisk the mixture thoroughly with a fork or whisk.
- 13. Heat a small non-stick pan.
- 14. Pour the egg mixture into the hot pan.
- 15. Cook the eggs over low heat for 3 to 5 minutes.
- 16. Push the eggs together from the outside in with a spatula until they set.
- 17. Cut the chicken breast into strips about 1 cm wide.
- 18. Finally season the fried asparagus with salt and pepper.
- 19. Plate the asparagus.
- 20. Add the scrambled eggs and chicken breast strips.
- 21. Serve the dish immediately.
