  2. 2. Rinse the salad thoroughly under running water.
  3. 3. Spin the salad dry, for example in a salad spinner.
  4. 4. Cut the salad into bite-sized pieces.
  5. 5. Squeeze the lemon to extract the juice.
  6. 6. Peel the garlic clove.
  7. 7. Press the garlic through a garlic press.
  8. 8. Whisk the olive oil with the mustard in a small bowl.
  9. 9. Add the lemon juice and the pressed garlic to the oil mixture.
  10. 10. Season the dressing with salt and pepper to taste.
