  5. 5. Remove the white pith completely as well.
  6. 6. Carefully separate the fruit segments from the membranes.
  7. 7. Squeeze the remaining orange pulp.
  8. 8. Catch the juice in a small bowl.
  9. 9. Heat a pan without any fat.
  10. 10. Lightly toast the walnuts in it.
  11. 11. Remove the nuts from the pan.
  12. 12. Set them aside.
  13. 13. Slice the goat cheese.
  14. 14. Put two tablespoons of orange juice into a bowl.
  15. 15. Whisk the juice with mustard.
