🥗 Fresh green salad with goat cheese, oranges, and walnuts

Ingredients
- 250 g mixed leaf salad (e.g. corn salad, frisée, radicchio)
- 2 organic oranges
- 100 g peeled walnut kernels
- 200 g goat cheese (log)
- 0.5 tsp Dijon mustard
- 0.5 tsp honey
- salt
- pepper
- 4 tbsp olive oil
- 1 sprig mint
Instructions
- 1. Wash the salad leaves thoroughly.
- 2. Spin the salad dry.
- 3. Tear the leaves into bite-sized pieces.
- 4. Peel the oranges.
- 5. Remove the white pith completely as well.
- 6. Carefully separate the fruit segments from the membranes.
- 7. Squeeze the remaining orange pulp.
- 8. Catch the juice in a small bowl.
- 9. Heat a pan without any fat.
- 10. Lightly toast the walnuts in it.
- 11. Remove the nuts from the pan.
- 12. Set them aside.
- 13. Slice the goat cheese.
- 14. Put two tablespoons of orange juice into a bowl.
- 15. Whisk the juice with mustard.
- 16. Add honey.
- 17. Season with salt.
- 18. Season with pepper.
- 19. Slowly beat in the oil.
- 20. Add the oil in a thin stream.
- 21. Distribute the salad onto plates.
- 22. Top the salad with the orange segments.
- 23. Place the goat cheese slices on top.
- 24. Sprinkle the walnuts over it.
- 25. Wash the mint.
- 26. Shake the mint dry.
- 27. Pluck the mint leaves off.
- 28. Garnish the salad with the mint leaves.
