🥗 Fresh leaf salad with grilled peaches, ham, and feta

Ingredients
- 250 g leaf salad (e.g. oak leaf, lollo rosso, frisée)
- 4 peaches
- 5 tbsp olive oil
- 150 g ham (in slices)
- 250 g feta
- 2 tbsp sliced almonds
- 1 tbsp capers
- 2 tbsp white apple cider vinegar
- 2 tbsp vegetable broth
- 1 tsp honey
- 1 tbsp freshly chopped dill
- 1 tbsp lemon juice
- salt
- pepper (from the mill)
Instructions
- 1. Wash the salad thoroughly, remove damaged leaves, and let it drain well.
- 2. Tear the salad leaves into bite-sized pieces.
- 3. Pour boiling water over the peaches briefly to blanch them.
- 4. Shock the peaches immediately with cold water to stop the cooking process.
- 5. Peel the skin off the peaches.
- 6. Halve the peaches and remove the pits.
- 7. Cut the peach halves into wedges.
- 8. Lightly brush the peach wedges and the ham slices with olive oil.
- 9. Place the peaches and the ham in a hot grill pan.
- 10. Grill the ingredients for three to four minutes until golden brown.
- 11. Cut the sheep's cheese (feta) into small cubes.
- 12. Toast the almonds in a pan without additional fat until golden brown.
- 13. Let the almonds cool down completely.
- 14. Roughly chop the cooled almonds.
- 15. Whisk the remaining oil, vinegar, vegetable broth, honey, dill, and lemon juice together in a bowl.
- 16. Fold in the capers into the dressing.
- 17. Season the sauce to taste with salt and pepper.
- 18. Distribute the salad onto the plates.
- 19. Place the grilled peaches and ham on top of the salad.
- 20. Sprinkle the feta cubes and chopped almonds over the top.
- 21. Drizzle the finished salad with the dressing and serve immediately.
