🥗 Fresh leaf salad with citrus segments

Ingredients
- 1 head lettuce (or 400 g leaf salads to your liking)
- 0.5 bunch chives
- 1 orange
- 1 small grapefruit
- 2 tbsp balsamic vinegar
- 0.5 tsp salt
- 1 pinch sugar
- 1 tsp mustard
- pepper (from the mill)
- 3 tbsp olive oil
- 2 tbsp toasted pine nuts
Instructions
- 1. Carefully separate the lettuce leaves into individual pieces.
- 2. Wash the leaves thoroughly and then dry them using a salad spinner.
- 3. Wash the chives and shake them dry.
- 4. Cut the chive stalks into pieces about five centimeters long.
- 5. Slice off the peel of the orange with a knife.
- 6. Make sure to remove the white pith completely as well.
- 7. Cut out the orange flesh segments in a wedge shape.
- 8. Catch the released juice in a bowl.
- 9. Squeeze the remaining fruit membranes.
- 10. Catch this juice as well.
- 11. Segment the grapefruit in the same way.
- 12. Use the grapefruit juice for something else, as you do not need it here.
- 13. Whisk the orange juice with vinegar, salt, sugar, mustard, and pepper.
- 14. Stir the oil into the mixture.
- 15. Stir until a creamy dressing forms.
- 16. Break the lettuce leaves into bite-sized pieces.
- 17. Marinate the leaves with the dressing.
- 18. Portion the salad into salad bowls.
- 19. Top the salad with the orange and grapefruit segments.
- 20. Sprinkle pine nuts over the top.
- 21. Garnish the dish with the prepared chives.
