🥗 Fresh Green Power Salad

Ingredients
- 2 Kohlrabi (with tender leaves)
- 1 Broccoli
- 5 tbsp Olive oil
- 30 g Pumpkin seeds (2 tbsp)
- Salt
- Pepper
- 1 sprig Thyme
- 1 Lemon (juice)
- 1 tsp Coarse mustard
- 1 tsp Honey
- 15 g Capers (1 tbsp; jar)
Instructions
- 1. Thoroughly wash the kohlrabi.
- 2. Peel off the tough outer skin of the kohlrabi.
- 3. Shave the kohlrabi into paper-thin slices.
- 4. Wash the kohlrabi leaves.
- 5. Remove the thick, hard leaf veins.
- 6. Cut the leaves into thin strips.
- 7. Wash the broccoli.
- 8. Cut off the hard stem at the bottom.
- 9. Peel the thick skin from the stem.
- 10. Shave the peeled stem into thin slices.
- 11. Divide the remaining broccoli into small florets.
- 12. Heat one tablespoon of oil in a pan.
- 13. Add the broccoli florets and stem slices to the pan.
- 14. Sauté the vegetables over medium heat for about 5 minutes.
- 15. Add the pumpkin seeds and kohlrabi leaves.
- 16. Sauté everything for another 3 minutes.
- 17. Season the mixture with salt and pepper.
- 18. Remove the pan from the heat.
- 19. Mix the warm vegetables with the raw kohlrabi slices.
- 20. Wash the thyme sprigs.
- 21. Shake them dry.
- 22. Pluck the small thyme leaves off the stems.
- 23. Whisk the remaining olive oil with the lemon juice.
- 24. Add mustard and honey to the liquid.
- 25. Fold in the thyme leaves.
- 26. Season the dressing with salt and pepper.
- 27. Add the capers.
- 28. Toss the finished dressing with the salad.
