  1. 1. Thoroughly wash the kohlrabi.
  2. 2. Peel off the tough outer skin of the kohlrabi.
  3. 3. Shave the kohlrabi into paper-thin slices.
  4. 4. Wash the kohlrabi leaves.
  5. 5. Remove the thick, hard leaf veins.
  6. 6. Cut the leaves into thin strips.
  7. 7. Wash the broccoli.
  8. 8. Cut off the hard stem at the bottom.
  9. 9. Peel the thick skin from the stem.
  10. 10. Shave the peeled stem into thin slices.
  11. 11. Divide the remaining broccoli into small florets.
  12. 12. Heat one tablespoon of oil in a pan.
  13. 13. Add the broccoli florets and stem slices to the pan.
  14. 14. Sauté the vegetables over medium heat for about 5 minutes.
  15. 15. Add the pumpkin seeds and kohlrabi leaves.
  16. 16. Sauté everything for another 3 minutes.
  17. 17. Season the mixture with salt and pepper.
  18. 18. Remove the pan from the heat.
  19. 19. Mix the warm vegetables with the raw kohlrabi slices.
  20. 20. Wash the thyme sprigs.
  21. 21. Shake them dry.
  22. 22. Pluck the small thyme leaves off the stems.
  23. 23. Whisk the remaining olive oil with the lemon juice.
  24. 24. Add mustard and honey to the liquid.
  25. 25. Fold in the thyme leaves.
  26. 26. Season the dressing with salt and pepper.
  27. 27. Add the capers.
  28. 28. Toss the finished dressing with the salad.
