🍽️ Fresh green potato salad with salmon

Ingredients
- 300 g firm-boiling potatoes (3 firm-boiling potatoes)
- salt
- 1 red onion
- 2 tbsp apple cider vinegar
- 150 ml classic vegetable broth
- 2 tbsp rapeseed oil
- pepper
- 80 g lamb's lettuce
- 1 bunch chives
- 1 apple
- 70 g smoked salmon ham
Instructions
- 1. Wash the potatoes thoroughly.
- 2. Place them in boiling water.
- 3. Cook them for 20 to 25 minutes until tender.
- 4. Drain the water.
- 5. Rinse the potatoes immediately under cold water.
- 6. Peel the cooled potatoes.
- 7. Let them cool down completely.
- 8. Slice the potatoes.
- 9. Lightly salt the slices.
- 10. Put the potatoes into a large bowl.
- 11. Peel the onion.
- 12. Dice the onion finely.
- 13. Put the onion cubes into a small pot.
- 14. Pour in the vinegar and broth.
- 15. Bring the mixture to a boil.
- 16. Pour the boiling hot liquid immediately over the potatoes.
- 17. Add the oil.
- 18. Stir everything well.
- 19. Let the salad rest for 30 minutes.
- 20. Stir occasionally.
- 21. Remove the tough root ends from the lamb's lettuce.
- 22. Wash the leaves carefully.
- 23. Dry the salad thoroughly.
- 24. Wash the chives.
- 25. Shake it dry.
- 26. Cut the chives into fine rings.
- 27. Wash the apple.
- 28. Quarter the apple.
- 29. Remove the core.
- 30. Cut the flesh into fine wedges.
- 31. Cut the salmon ham into fine strips.
- 32. Season the potato salad with salt and pepper.
- 33. Add the lamb's lettuce.
- 34. Add the chive rings.
- 35. Add the ham strips.
- 36. Add the apple slices.
- 37. Gently fold all ingredients together.
