🍽️ Green Bean Salad with Indian Spices

Ingredients
- 600 g green beans
- 60 g coconut flesh (or coconut flakes)
- 1 small onion
- 1 clove garlic
- 2 red chili peppers
- 2 tbsp coconut oil
- 0.5 tsp mustard seeds
- 6 curry leaves
- salt
- 3 tbsp lemon juice
Instructions
- 1. Thoroughly wash the green beans.
- 2. Remove the tough ends of the beans.
- 3. Cut the beans into pieces about 1 centimeter long.
- 4. Grate the coconut flesh finely.
- 5. Peel the onion and the garlic.
- 6. Finely chop the onion and the garlic.
- 7. Wash the chili peppers.
- 8. Slice the chili peppers lengthwise.
- 9. Heat the coconut oil in a pan.
- 10. Add the mustard seeds to the hot pan.
- 11. Fry the mustard seeds while stirring until they start to pop.
- 12. Add the chopped onion to the pan.
- 13. Add the chopped garlic to the pan.
- 14. Add the sliced chili peppers to the pan.
- 15. Add the curry leaves to the pan.
- 16. Fry the spices for 2 minutes while stirring.
- 17. Remove the pan from the heat.
- 18. Let the spice mixture cool down.
- 19. Bring water to a boil and add salt.
- 20. Cook the beans for approx. 10 minutes.
- 21. Drain the beans.
- 22. Shock the beans with cold water (blanching).
- 23. Let the beans drain well.
- 24. Mix the beans with the cooled spice mixture.
- 25. Add the lemon juice.
- 26. Let the salad marinate for a while.
- 27. Finally, taste the salad and adjust seasoning.
- 28. Place the salad in a serving bowl.
- 29. Sprinkle the grated coconut flakes over the salad.
- 30. Serve the salad.
