  1. 1. Thoroughly wash the green beans.
  2. 2. Remove the tough ends of the beans.
  3. 3. Cut the beans into pieces about 1 centimeter long.
  4. 4. Grate the coconut flesh finely.
  5. 5. Peel the onion and the garlic.
  6. 6. Finely chop the onion and the garlic.
  7. 7. Wash the chili peppers.
  8. 8. Slice the chili peppers lengthwise.
  9. 9. Heat the coconut oil in a pan.
  10. 10. Add the mustard seeds to the hot pan.
  11. 11. Fry the mustard seeds while stirring until they start to pop.
  12. 12. Add the chopped onion to the pan.
  13. 13. Add the chopped garlic to the pan.
  14. 14. Add the sliced chili peppers to the pan.
  15. 15. Add the curry leaves to the pan.
  16. 16. Fry the spices for 2 minutes while stirring.
  17. 17. Remove the pan from the heat.
  18. 18. Let the spice mixture cool down.
  19. 19. Bring water to a boil and add salt.
  20. 20. Cook the beans for approx. 10 minutes.
  21. 21. Drain the beans.
  22. 22. Shock the beans with cold water (blanching).
  23. 23. Let the beans drain well.
  24. 24. Mix the beans with the cooled spice mixture.
  25. 25. Add the lemon juice.
  26. 26. Let the salad marinate for a while.
  27. 27. Finally, taste the salad and adjust seasoning.
  28. 28. Place the salad in a serving bowl.
  29. 29. Sprinkle the grated coconut flakes over the salad.
  30. 30. Serve the salad.
