🍽️ Fresh Salad with Green Beans and Peas

Ingredients
- 100 g peas
- 100 g broad beans
- 100 g goat cheese
- 1 handful young arugula
- 1 handful purslane
- chervil
- 3 tbsp olive oil
- 1 tbsp lemon juice
- 1 tbsp white wine vinegar
- sea salt
- pepper (from the mill)
Instructions
- 1. Blanch the peas and green beans in boiling salted water for about 4 to 5 minutes. Remove them, rinse briefly with cold water to stop the cooking process, and let them drain well.
- 2. Wash the arugula, chervil, and purslane and remove any damaged parts. Place everything in a bowl, add oil, lemon juice, and white wine vinegar, and toss well. Season with salt and pepper to taste, crumble the goat cheese over the top, and serve immediately.
