🍽️ Fresh Green Tomato Salsa

Ingredients
- 2 green chili peppers
- 750 g semi-ripe tomatoes (or firm green tomatoes)
- 2 onions
- 1 bunch cilantro
- 1 lime
- 2 tbsp olive oil
- salt
- pepper
Instructions
- 1. Preheat a grill pan or light the grill.
- 2. Place the green chili peppers on the heat source.
- 3. Roast the peppers all around until they have dark char marks.
- 4. Remove the peppers from the heat and place them under cold running water.
- 5. Peel the charred skin off the chili peppers.
- 6. Cut the deseeded peppers in half lengthwise.
- 7. Remove the seeds and rinse the peppers under running water.
- 8. Finely chop the chili peppers.
- 9. Wash the green tomatoes thoroughly.
- 10. Cut the tomatoes into quarters.
- 11. Cut out the hard stem areas from the tomato wedges in a wedge shape.
- 12. Remove the seeds and watery interior of the tomatoes.
- 13. Dice the firm tomato flesh into small cubes.
- 14. Peel the onions.
- 15. Finely chop the onions.
- 16. Wash the cilantro leaves.
- 17. Shake the cilantro dry to remove excess water.
- 18. Finely chop the cilantro leaves.
- 19. Place the chopped chili peppers, onions, and tomatoes into a large bowl.
- 20. Add the chopped cilantro to the bowl.
- 21. Squeeze the lime to extract the juice.
- 22. Stir two to three tablespoons of lime juice into the tomato mixture.
- 23. Add some olive oil.
- 24. Season the salsa with salt and black pepper to taste.
- 25. Let the salsa rest for one hour to allow the flavors to meld.
