🍽️ Green Sauce with Egg

Ingredients
- 4 eggs
- 20 g fresh herbs (e.g. chives, parsley)
- 1 tsp hot mustard
- 200 g whipping cream
- 200 g sour cream
- 1 dash lemon juice
- salt
- pepper
Instructions
- 1. Place the eggs in cold water and bring to a boil. Boil the eggs for about 10 minutes until hard-boiled. Drain the hot water and immediately rinse the eggs under cold water to make the shells easier to peel. Peel the cooked eggs and chop them into coarse pieces.
- 2. Wash the fresh herbs under running water. Shake them dry and pick the leaves off the stems. Chop the herbs finely.
- 3. In a bowl, whisk the mustard with the whipping cream and the sour cream until you have a smooth mixture.
- 4. Gently fold in the chopped eggs and the finely cut herbs into the cream mixture until everything is evenly distributed.
- 5. Season the sauce to taste with lemon juice, salt, and pepper. Stir everything well and then serve the sauce.
