  1. 1. Place the eggs in cold water and bring to a boil. Boil the eggs for about 10 minutes until hard-boiled. Drain the hot water and immediately rinse the eggs under cold water to make the shells easier to peel. Peel the cooked eggs and chop them into coarse pieces.
  2. 2. Wash the fresh herbs under running water. Shake them dry and pick the leaves off the stems. Chop the herbs finely.
  3. 3. In a bowl, whisk the mustard with the whipping cream and the sour cream until you have a smooth mixture.
  4. 4. Gently fold in the chopped eggs and the finely cut herbs into the cream mixture until everything is evenly distributed.
  5. 5. Season the sauce to taste with lemon juice, salt, and pepper. Stir everything well and then serve the sauce.
