🍕 Green Pizza

Ingredients
- 200 g spelt flour (Type 630)
- salt
- 2 tsp dried Italian herbs
- 1 packet dry yeast
- 3 tbsp olive oil
- 100 g small zucchini (1 small zucchini)
- 100 g snow peas
- 200 g green peas (in the pod; yields 50 g peas)
- 20 g Parmesan (1 piece)
- 100 g ricotta
- 3 tbsp milk (1.5% fat)
- pepper
- 5 sprigs flat-leaf parsley
Instructions
- 1. Mix flour, salt, Italian herbs, and yeast in a large bowl.
- 2. Add 1 tablespoon of oil and 125 milliliters of lukewarm water.
- 3. Knead the dough until smooth using the dough hooks of a hand mixer.
- 4. If necessary, add 1 to 2 tablespoons of warm water.
- 5. Cover the bowl with a kitchen towel.
- 6. Let the dough rise for about 1 hour.
- 7. Wash and trim the zucchini.
- 8. Slice the zucchini thinly using a vegetable peeler.
- 9. Wash the snow peas and drain them.
- 10. Cut the snow peas lengthwise into thin strips.
- 11. Hull the peas.
- 12. Rinse the peas briefly with hot water.
- 13. Drain the peas well in a sieve.
- 14. Bring salted water to a boil.
- 15. Cook the peas and snow peas in the boiling water for 1 minute.
- 16. This process is called blanching (cooking briefly in boiling water).
- 17. Drain the vegetables and let them drip dry in a sieve.
- 18. Grate the Parmesan cheese finely.
- 19. Stir the Parmesan together with ricotta and milk in a small bowl.
- 20. Line a baking tray with baking paper.
- 21. Dust the work surface with flour.
- 22. Roll out the dough into a round shape.
- 23. The dough should be about 35 centimeters in diameter.
- 24. Place the dough on the prepared baking tray.
- 25. Spread the Parmesan-ricotta mixture evenly over the dough.
- 26. Season the base with a little salt and pepper.
- 27. Top the pizza with the zucchini slices.
- 28. Distribute the snow pea strips over the zucchini.
- 29. Sprinkle the peas over the top.
- 30. Preheat the oven to 225 degrees Celsius.
- 31. Use fan-assisted heat at 200 degrees or gas level 3 to 4.
- 32. Place the pizza on the lowest rack.
- 33. Bake the pizza for 15 to 20 minutes.
- 34. Wash the parsley and shake it dry.
- 35. Chop the parsley very finely.
- 36. Use a food processor or a large knife.
- 37. Mix the parsley with the remaining oil.
- 38. Drizzle the parsley oil over the finished pizza.
