  3. 3. Knead the dough until smooth using the dough hooks of a hand mixer.
  4. 4. If necessary, add 1 to 2 tablespoons of warm water.
  5. 5. Cover the bowl with a kitchen towel.
  6. 6. Let the dough rise for about 1 hour.
  7. 7. Wash and trim the zucchini.
  8. 8. Slice the zucchini thinly using a vegetable peeler.
  9. 9. Wash the snow peas and drain them.
  10. 10. Cut the snow peas lengthwise into thin strips.
  11. 11. Hull the peas.
  12. 12. Rinse the peas briefly with hot water.
  13. 13. Drain the peas well in a sieve.
  14. 14. Bring salted water to a boil.
  15. 15. Cook the peas and snow peas in the boiling water for 1 minute.
  16. 16. This process is called blanching (cooking briefly in boiling water).
  17. 17. Drain the vegetables and let them drip dry in a sieve.
  18. 18. Grate the Parmesan cheese finely.
  19. 19. Stir the Parmesan together with ricotta and milk in a small bowl.
