  1. 1. Bring a large pot of salted water to a boil and cook the pasta until al dente (firm to the bite).
  2. 2. Cut the Gorgonzola into small cubes.
  3. 3. Peel the garlic and chop it finely.
  4. 4. Melt the butter in a pan and sauté the garlic briefly.
  5. 5. Dust the pan with flour and stir it in.
  6. 6. Pour in the milk and cream and bring the mixture to a boil.
  7. 7. Let the sauce simmer on low heat for about 5 minutes, stirring occasionally.
  8. 8. Remove the pan from the heat and stir in the Gorgonzola and half of the Parmesan.
  9. 9. Season the sauce to taste with salt, pepper, and nutmeg.
  10. 10. Drain the pasta and toss it in the sauce, adding a little pasta water if needed.
  11. 11. Divide the pasta among plates and sprinkle with the remaining Parmesan.
