🍽️ Fresh green minestrone with fava beans

Ingredients
- 400 g small, waxy potatoes
- 1 carrot
- 2 garlic cloves
- 1 white onion
- 2 tbsp olive oil
- 750 ml vegetable broth
- salt
- 100 g fresh, shelled fava beans
- 100 g soup noodles
- 100 g peas (fresh or frozen)
- sage leaf (for garnishing)
- pepper (from the mill)
- basil (for serving)
Instructions
- 1. Peel the potatoes and wash them thoroughly.
- 2. Slice the potatoes into thin rounds.
- 3. Peel the carrots.
- 4. Dice the carrots into small cubes.
- 5. Peel the garlic and the onion.
- 6. Finely chop the garlic and the onion.
- 7. Heat some oil in a pot.
- 8. Sauté the garlic and onion briefly in the hot oil.
- 9. Deglaze the mixture with the vegetable broth.
- 10. Add the potato slices to the soup.
- 11. Season the soup with salt to taste.
- 12. Simmer the soup over low heat for about 10 minutes.
- 13. Add the carrots, fava beans, pasta, and peas to the pot.
- 14. Cook everything together for another 8 minutes.
- 15. Add more broth if necessary.
- 16. Add the sage leaves to the soup.
- 17. Taste the minestrone and adjust the seasoning if needed.
- 18. Ladle the soup into deep bowls.
- 19. Garnish the bowls with fresh basil.
