🍰 Green Fruit Grütze

Ingredients
- 1 vanilla pod
- 400 ml apple juice
- 0.5 organic lemon
- 20 g cornstarch (2 tbsp)
- 2 white peaches
- 100 g green seedless grapes
- 300 g honeydew melon (1 piece)
- 4 kiwis
- 100 g whipping cream
- 0.5 packet vanilla sugar
- 150 g yogurt (1.5% fat)
- to taste: mint (or lemon verbena)
Instructions
- 1. Slice the vanilla pod lengthwise.
- 2. Scrape out the seeds with the tip of a knife.
- 3. Add the vanilla seeds and apple juice to a pot.
- 4. Bring the mixture to a boil.
- 5. Squeeze the half lemon.
- 6. Stir about one tablespoon of lemon juice with the starch until smooth.
- 7. Add the lemon-starch mixture to the boiling apple juice.
- 8. Let the mixture come to a boil once.
- 9. Set the pot aside.
- 10. Dip the peaches briefly into boiling water.
- 11. Lift the peaches out with a slotted spoon.
- 12. Shock the peaches with cold water.
- 13. Peel the skin off the peaches.
- 14. Halve the fruits.
- 15. Remove the stones.
- 16. Dice the flesh.
- 17. Wash the grapes.
- 18. Halve the grapes.
- 19. Remove the seeds from the grapes if necessary.
- 20. Remove the seeds from the melon.
- 21. Cut the melon into wedges.
- 22. Cut the flesh away from the rind.
- 23. Dice the melon flesh.
- 24. Peel the kiwis.
- 25. Dice the kiwi flesh.
- 26. Place about half of the kiwi cubes into a tall container.
- 27. Puree the kiwi cubes with a hand blender.
- 28. Stir the kiwi puree into the apple juice mixture.
- 29. Fold in all the prepared fruits.
- 30. Fill the grütze into dessert glasses.
- 31. Chill the glasses for at least two hours.
- 32. Whip the cream with the vanilla sugar until stiff.
- 33. Stir the yogurt until smooth.
- 34. Fold the cream into the yogurt using a rubber spatula.
- 35. Distribute the cream mixture over the grütze.
- 36. Garnish the grütze with mint or lemon verbena if desired.
- 37. Serve the grütze.
