  1. 1. Slice the vanilla pod lengthwise.
  2. 2. Scrape out the seeds with the tip of a knife.
  3. 3. Add the vanilla seeds and apple juice to a pot.
  4. 4. Bring the mixture to a boil.
  5. 5. Squeeze the half lemon.
  6. 6. Stir about one tablespoon of lemon juice with the starch until smooth.
  7. 7. Add the lemon-starch mixture to the boiling apple juice.
  8. 8. Let the mixture come to a boil once.
  9. 9. Set the pot aside.
  10. 10. Dip the peaches briefly into boiling water.
  11. 11. Lift the peaches out with a slotted spoon.
  12. 12. Shock the peaches with cold water.
  13. 13. Peel the skin off the peaches.
  14. 14. Halve the fruits.
  15. 15. Remove the stones.
  16. 16. Dice the flesh.
  17. 17. Wash the grapes.
  18. 18. Halve the grapes.
  19. 19. Remove the seeds from the grapes if necessary.
  20. 20. Remove the seeds from the melon.
  21. 21. Cut the melon into wedges.
  22. 22. Cut the flesh away from the rind.
  23. 23. Dice the melon flesh.
  24. 24. Peel the kiwis.
  25. 25. Dice the kiwi flesh.
  26. 26. Place about half of the kiwi cubes into a tall container.
  27. 27. Puree the kiwi cubes with a hand blender.
  28. 28. Stir the kiwi puree into the apple juice mixture.
  29. 29. Fold in all the prepared fruits.
  30. 30. Fill the grütze into dessert glasses.
  31. 31. Chill the glasses for at least two hours.
  32. 32. Whip the cream with the vanilla sugar until stiff.
  33. 33. Stir the yogurt until smooth.
  34. 34. Fold the cream into the yogurt using a rubber spatula.
  35. 35. Distribute the cream mixture over the grütze.
  36. 36. Garnish the grütze with mint or lemon verbena if desired.
  37. 37. Serve the grütze.
