🍽️ Fresh Green Vegetable Soup

Ingredients
- 1 onion
- 2 garlic cloves
- 1 zucchini
- 250 g thick white beans (can)
- 200 g peas (frozen)
- 1 tbsp butter
- 800 ml vegetable broth
- 200 g macaroni
- 4 tbsp chive rings
- salt
- pepper
Instructions
- 1. Peel the onion and the garlic.
- 2. Finely dice the onion and the garlic.
- 3. Wash the zucchini thoroughly.
- 4. Cut the zucchini in half lengthwise.
- 5. Slice the zucchini halves into thin rounds.
- 6. Drain the canned beans.
- 7. Let the beans drain well.
- 8. Let the peas thaw slightly.
- 9. Heat the butter in a large pot.
- 10. Sauté the onions and garlic until translucent.
- 11. Deglaze the vegetables with the vegetable broth.
- 12. Add the macaroni to the broth.
- 13. Add the zucchini slices to the broth.
- 14. Add the drained beans to the broth.
- 15. Cook the pasta until almost al dente.
- 16. Add the peas to the soup.
- 17. Cook the peas for about 2 minutes.
- 18. Add the chives to the soup.
- 19. Season the soup with salt.
- 20. Season the soup with pepper.
