🍝 Green pea penne with arugula

Ingredients

- 250 g penne (made from green peas)
- 90 g arugula
- 5 tbsp pitted black olives
- 125 g mozzarella
- 2 tbsp olive oil
- 1 tbsp balsamic vinegar
- 1 tsp aglio-e-olio spice mix
- pepper
- paprika powder hot
- 2 tbsp seed mix
Instructions
- 1. Bring two liters of water to a boil, add salt, and cook the green pea penne in it for six minutes. Then remove the pasta from the heat, drain it, let the water drip off, and allow it to cool down.
- 2. Meanwhile, clean the arugula, wash it thoroughly, and shake it dry. Slice the olives. Remove the mozzarella from the package, drain the liquid, and cut the cheese into small cubes.
- 3. Whisk together a dressing using olive oil, vinegar, salt, aglio-e-olio (garlic in oil), pepper, and paprika powder. Add a little water to taste if you find it too thick.
- 4. Mix the cooled penne with the arugula. Sprinkle the olives, mozzarella cubes, and mixed seeds over the top. Then pour the dressing over everything and mix well.
