  2. 2. Trim off the hard ends of the beans.
  3. 3. Bring a pot of water and salt to a boil.
  4. 4. Boil the beans for about 12 minutes.
  5. 5. Drain the cooking water.
  6. 6. Immediately rinse the beans with cold water to stop the cooking process.
  7. 7. Let the beans drain well.
  8. 8. Peel off the outer skin of the spring onions.
  9. 9. Wash the spring onions and pat them dry.
  10. 10. Slice the spring onions into fine rings.
  11. 11. Wash the lemon under hot water.
  12. 12. Finely grate the zest from half a lemon.
  13. 13. Cut the lemon in half.
  14. 14. Cut four thin strips from the lemon for decoration.
  15. 15. Squeeze the juice from the lemon halves.
  16. 16. Mix the lemon juice with vinegar, salt, pepper, maple syrup, and olive oil.
  17. 17. Vigorously whisk the mixture with a hand blender or a whisk.
  18. 18. Place the drained beans on a deep plate.
  19. 19. Sprinkle the spring onion rings and lemon zest over the beans.
  20. 20. Pour the vinaigrette (dressing) over the salad.
  21. 21. Place the salad in the refrigerator.
  22. 22. Let the salad marinate for 30 minutes.
