🥗 Crunchy Green Bean Salad with Lemon Dressing

Ingredients
- 500 g green fine beans
- salt, pepper from the mill
- 1 bunch spring onions
- 1 lemon
- 1 tbsp white wine vinegar
- 1 tbsp maple syrup
- 4 tbsp olive oil (40 ml each)
Instructions
- 1. Rinse the green beans under running water.
- 2. Trim off the hard ends of the beans.
- 3. Bring a pot of water and salt to a boil.
- 4. Boil the beans for about 12 minutes.
- 5. Drain the cooking water.
- 6. Immediately rinse the beans with cold water to stop the cooking process.
- 7. Let the beans drain well.
- 8. Peel off the outer skin of the spring onions.
- 9. Wash the spring onions and pat them dry.
- 10. Slice the spring onions into fine rings.
- 11. Wash the lemon under hot water.
- 12. Finely grate the zest from half a lemon.
- 13. Cut the lemon in half.
- 14. Cut four thin strips from the lemon for decoration.
- 15. Squeeze the juice from the lemon halves.
- 16. Mix the lemon juice with vinegar, salt, pepper, maple syrup, and olive oil.
- 17. Vigorously whisk the mixture with a hand blender or a whisk.
- 18. Place the drained beans on a deep plate.
- 19. Sprinkle the spring onion rings and lemon zest over the beans.
- 20. Pour the vinaigrette (dressing) over the salad.
- 21. Place the salad in the refrigerator.
- 22. Let the salad marinate for 30 minutes.
