  1. 1. Rinse the green beans under running water.
  2. 2. Remove the hard ends and cut the beans into bite-sized pieces.
  3. 3. Bring a pot of salted water to a boil.
  4. 4. Cook the beans in it for about 6 to 8 minutes until tender-crisp.
  5. 5. Drain the beans and rinse them immediately with cold water to stop the cooking process.
  6. 6. Let the beans drain well.
  7. 7. Cook the lentils in the same salted water for 4 to 5 minutes.
  8. 8. Drain the lentils and let them drain as well.
  9. 9. Peel the onion and cut it into small cubes.
  10. 10. Rinse the chili pepper and remove the seeds.
  11. 11. Finely chop the chili pepper.
  12. 12. Whisk vinegar, salt, pepper, oil, and horseradish in a bowl to make a dressing.
  13. 13. Mix the lentils, beans, onions, and chili with the vinaigrette.
  14. 14. Cover the bowl and let the salad marinate for 30 minutes.
  15. 15. Drizzle lime juice over the artichoke bottoms.
  16. 16. Season the artichoke bottoms with salt and pepper.
  17. 17. Cut the meat sausage into wide strips.
  18. 18. Roll up the sausage strips.
  19. 19. Fold the sausage into the bean salad.
  20. 20. Serve the salad together with the artichoke bottoms.
