🥗 Fresh Green Bean and Lentil Salad

Ingredients
- 250 g green beans
- salt
- 80 g red lentils
- 1 onion
- red chili peppers
- 2 tbsp white wine vinegar
- pepper
- 3 tbsp oil
- 20 g fresh grated horseradish
- 8 slices meat sausage
- 12 artichoke bottoms
- juice of 1/2 limes
Instructions
- 1. Rinse the green beans under running water.
- 2. Remove the hard ends and cut the beans into bite-sized pieces.
- 3. Bring a pot of salted water to a boil.
- 4. Cook the beans in it for about 6 to 8 minutes until tender-crisp.
- 5. Drain the beans and rinse them immediately with cold water to stop the cooking process.
- 6. Let the beans drain well.
- 7. Cook the lentils in the same salted water for 4 to 5 minutes.
- 8. Drain the lentils and let them drain as well.
- 9. Peel the onion and cut it into small cubes.
- 10. Rinse the chili pepper and remove the seeds.
- 11. Finely chop the chili pepper.
- 12. Whisk vinegar, salt, pepper, oil, and horseradish in a bowl to make a dressing.
- 13. Mix the lentils, beans, onions, and chili with the vinaigrette.
- 14. Cover the bowl and let the salad marinate for 30 minutes.
- 15. Drizzle lime juice over the artichoke bottoms.
- 16. Season the artichoke bottoms with salt and pepper.
- 17. Cut the meat sausage into wide strips.
- 18. Roll up the sausage strips.
- 19. Fold the sausage into the bean salad.
- 20. Serve the salad together with the artichoke bottoms.
