  1. 1. Place the sifted flour in a bowl and add a pinch of salt.
  2. 2. Stir in the white wine until a thick batter forms.
  3. 3. Separate the eggs by dividing the yolks from the whites.
  4. 4. Add the egg yolks and oil to the batter and mix well.
  5. 5. Whisk the egg whites until they form stiff peaks.
  6. 6. Gently fold the whipped egg whites into the batter.
  7. 7. Wash the green beans and trim off the hard ends.
  8. 8. Blanch the beans in plenty of salted boiling water for 8 to 10 minutes.
  9. 9. Drain the beans and let them cool down.
  10. 10. Heat plenty of frying oil in a deep pan.
  11. 11. Dip the beans in batches into the batter.
  12. 12. Fry the battered beans in the hot oil until golden yellow.
  13. 13. Place the finished beans on kitchen paper to absorb excess oil.
