🍲 Tasty Classic Green Bean Stew

Ingredients
- 250 g dried white beans
- 1.5 l water
- 200 g green beans
- 2 large tomatoes
- 2 onions
- 2 garlic cloves
- 3 stalks celery
- 4 tbsp olive oil (40 ml)
- salt
- pepper
- 1 bunch basil (20 g)
Instructions
- 1. Place the white beans in a pot with water overnight.
- 2. Boil the beans in fresh boiling water for about one and a half hours until they are soft.
- 3. Peel the onions and garlic.
- 4. Cut the onions in half and slice them into thin rings.
- 5. Finely chop the garlic.
- 6. Wash the celery and pat it dry.
- 7. Cut the celery into pieces.
- 8. Trim the green beans and cut off the ends.
- 9. Chop the green beans into coarse pieces.
- 10. Wash the tomatoes and pat them dry.
- 11. Dice the tomatoes.
- 12. Heat the olive oil in a large pot.
- 13. Sauté the onions and garlic in it over medium heat.
- 14. Add the green beans, tomatoes, celery, and the drained white beans.
- 15. Sauté everything briefly.
- 16. Season the mixture generously with salt and pepper.
- 17. Pour in half a liter of cooking liquid.
- 18. Let the stew simmer covered on low heat for 15 minutes.
- 19. Wash the basil and shake it dry.
- 20. Pick the leaves off the stems.
- 21. Reserve some leaves for garnishing.
- 22. Stir the rest of the basil into the stew.
- 23. Let the dish simmer for another 5 minutes.
- 24. Taste the stew and adjust the seasoning if needed.
- 25. Garnish the stew with the reserved basil leaves.
