  1. 1. Place the white beans in a pot with water overnight.
  2. 2. Boil the beans in fresh boiling water for about one and a half hours until they are soft.
  3. 3. Peel the onions and garlic.
  4. 4. Cut the onions in half and slice them into thin rings.
  5. 5. Finely chop the garlic.
  6. 6. Wash the celery and pat it dry.
  7. 7. Cut the celery into pieces.
  8. 8. Trim the green beans and cut off the ends.
  9. 9. Chop the green beans into coarse pieces.
  10. 10. Wash the tomatoes and pat them dry.
  11. 11. Dice the tomatoes.
  12. 12. Heat the olive oil in a large pot.
  13. 13. Sauté the onions and garlic in it over medium heat.
  14. 14. Add the green beans, tomatoes, celery, and the drained white beans.
  15. 15. Sauté everything briefly.
  16. 16. Season the mixture generously with salt and pepper.
  17. 17. Pour in half a liter of cooking liquid.
  18. 18. Let the stew simmer covered on low heat for 15 minutes.
  19. 19. Wash the basil and shake it dry.
  20. 20. Pick the leaves off the stems.
  21. 21. Reserve some leaves for garnishing.
  22. 22. Stir the rest of the basil into the stew.
  23. 23. Let the dish simmer for another 5 minutes.
  24. 24. Taste the stew and adjust the seasoning if needed.
  25. 25. Garnish the stew with the reserved basil leaves.
