  1. 1. Place the beans in a bowl and cover them with cold water. Let them soak overnight.
  2. 2. Drain the soaking water and rinse the beans.
  3. 3. Place the beans in a pot and cover them with vegetable broth.
  4. 4. Bring the broth to a boil.
  5. 5. Reduce the heat, cover the pot, and let the beans simmer gently for about 1 hour.
  6. 6. Preheat the oven to 180 degrees Celsius using the top and bottom heat setting.
  7. 7. Peel the onions and garlic.
  8. 8. Peel the carrots.
  9. 9. Dice the onions, garlic, and carrots into small cubes.
  10. 10. Wash the celery thoroughly.
  11. 11. Remove the tough strings and the end of the celery.
  12. 12. Dice the celery into small cubes as well.
  13. 13. Pour boiling water over the tomatoes.
  14. 14. Remove the tomatoes immediately from the hot water and plunge them into cold water.
  15. 15. Peel the skin off the tomatoes.
  16. 16. Cut the tomatoes into quarters.
  17. 17. Remove the seeds from the tomato quarters.
  18. 18. Dice the flesh of the tomatoes.
  19. 19. Heat oil in an oven-safe pan or pot.
  20. 20. Add the diced onions, garlic, carrots, and celery to the hot oil.
  21. 21. Sauté the vegetables briefly until they become soft.
  22. 22. Stir the diced tomatoes into the vegetables.
  23. 23. Add the cooked beans to the pan.
  24. 24. Add fresh thyme sprigs.
  25. 25. Season the mixture with salt and pepper.
  26. 26. Pour in a little more vegetable broth if the mixture seems too dry.
  27. 27. Place the pan in the preheated oven.
  28. 28. Let the dish cook in the oven for about 30 minutes.
  29. 29. Check during cooking to see if more liquid is needed, and add more broth if necessary.
