🍽️ White Beans Stewed in Tomato Sauce

Ingredients
- 400 g dried giant beans
- 800 ml vegetable broth
- 2 onions
- 2 garlic cloves
- 2 carrots
- 2 stalks celery
- 1 kg tomatoes
- 3 tbsp olive oil
- 1 tbsp fresh chopped thyme
- salt
- pepper (from the mill)
- thyme sprig (for garnish)
Instructions
- 1. Place the beans in a bowl and cover them with cold water. Let them soak overnight.
- 2. Drain the soaking water and rinse the beans.
- 3. Place the beans in a pot and cover them with vegetable broth.
- 4. Bring the broth to a boil.
- 5. Reduce the heat, cover the pot, and let the beans simmer gently for about 1 hour.
- 6. Preheat the oven to 180 degrees Celsius using the top and bottom heat setting.
- 7. Peel the onions and garlic.
- 8. Peel the carrots.
- 9. Dice the onions, garlic, and carrots into small cubes.
- 10. Wash the celery thoroughly.
- 11. Remove the tough strings and the end of the celery.
- 12. Dice the celery into small cubes as well.
- 13. Pour boiling water over the tomatoes.
- 14. Remove the tomatoes immediately from the hot water and plunge them into cold water.
- 15. Peel the skin off the tomatoes.
- 16. Cut the tomatoes into quarters.
- 17. Remove the seeds from the tomato quarters.
- 18. Dice the flesh of the tomatoes.
- 19. Heat oil in an oven-safe pan or pot.
- 20. Add the diced onions, garlic, carrots, and celery to the hot oil.
- 21. Sauté the vegetables briefly until they become soft.
- 22. Stir the diced tomatoes into the vegetables.
- 23. Add the cooked beans to the pan.
- 24. Add fresh thyme sprigs.
- 25. Season the mixture with salt and pepper.
- 26. Pour in a little more vegetable broth if the mixture seems too dry.
- 27. Place the pan in the preheated oven.
- 28. Let the dish cook in the oven for about 30 minutes.
- 29. Check during cooking to see if more liquid is needed, and add more broth if necessary.
- 30. Remove the pan from the oven.
- 31. Garnish the dish with fresh thyme sprigs.
- 32. Serve the dish warm.
