  1. 1. Coarsely crush juniper berries, peppercorns, and cloves in a mortar.
  2. 2. Mix the crushed spices with the oil to create a seasoning oil.
  3. 3. Cut the sausages into pieces about 3 cm long.
  4. 4. Wash the peppers and cut them in half lengthwise.
  5. 5. Remove the seeds and all white inner membranes from the peppers.
  6. 6. Cut the deseeded peppers into pieces about 3 cm large.
  7. 7. Wash and trim the spring onions.
  8. 8. Cut the white and light green parts of the spring onions into 2 cm long pieces.
  9. 9. Thread the peppers, sausage pieces, and spring onions onto the skewers in an alternating pattern.
  10. 10. Season the skewers with salt and pepper.
  11. 11. Brush the skewers again with the seasoning oil.
  12. 12. Grill the skewers on a hot grill for about 6 to 8 minutes.
  13. 13. Turn the skewers several times during grilling.
  14. 14. Brush the skewers with seasoning oil repeatedly while grilling.
  15. 15. Drizzle the finished skewers with a little lemon juice.
  16. 16. Serve the skewers with horseradish.
