🍽️ Wooden Skewer Bread with Grilled Vegetables

Ingredients
- 20 g yeast
- 300 g flour
- 1 cup lukewarm water
- 1 pinch salt
- 4 untreated lemons
- 4 chicory
- 2 bulbs fennel
- 2 small radicchio
- thyme sprig
- rosemary sprig
- olive oil
- salt
- pepper (from the mill)
Instructions
- 1. Crumble the yeast into a bowl.
- 2. Dissolve the yeast with a small splash of water.
- 3. Stir in two tablespoons of flour into the yeast mixture.
- 4. Let the mixture rise under a lid for about 30 minutes.
- 5. Pour the remaining flour onto a clean work surface.
- 6. Press a small well into the center of the flour mound.
- 7. Place the prepared pre-dough into this well.
- 8. Add a pinch of salt and the remaining water.
- 9. Knead everything thoroughly until you have a smooth dough.
- 10. Place the dough into a bowl.
- 11. Let the dough rise in a warm place for at least one hour.
- 12. Wait until the volume of the dough has doubled.
- 13. Knead the risen dough vigorously on a floured surface.
- 14. Divide the dough into small portions.
- 15. Flatten the portions with your palm into thin, long strands.
- 16. Wrap the dough strands spirally around wooden skewers.
- 17. Let the skewers rise for another 15 minutes.
- 18. Preheat the grill.
- 19. Grill the bread skewers until golden brown on all sides.
- 20. Rinse the lemons under hot water.
- 21. Cut the lemons in half crosswise.
- 22. Wash the vegetables thoroughly.
- 23. Remove any tough stems or ends (clean the vegetables).
- 24. Cut the vegetables in half or quarters lengthwise.
- 25. Brush the lemon halves and vegetables with olive oil.
- 26. Place everything on the not-too-hot grill.
- 27. Grill the vegetables and lemons.
- 28. Season the grilled vegetables with salt and pepper.
- 29. Garnish the dish with fresh herbs.
