🍰 Creamy Semolina Pudding with Poppy Seeds and Apple Compote

Ingredients
- 800 ml milk
- 0.5 tsp lemon zest
- 50 g sugar
- 80 g semolina
- 50 g poppy seeds
- 2 apples
- 0.5 untreated lemon (juice)
- 1 tbsp apple juice
- 1 pinch cinnamon
- 2 tbsp sugar
- apple slices
- mint
- powdered sugar (for dusting)
Instructions
- 1. Put the milk, lemon zest, and sugar into a pot.
- 2. Bring the milk mixture to a boil while stirring.
- 3. Stir the semolina and poppy seeds into the boiling milk.
- 4. Let the mixture simmer for 5 to 10 minutes while stirring constantly until it becomes thick.
- 5. Rinse the pudding molds briefly with cold water.
- 6. Pour the hot semolina mixture into the prepared molds.
- 7. Place the molds in the refrigerator for at least 3 hours until the pudding is set.
- 8. Wash the apples thoroughly.
- 9. Peel the apples and remove the core.
- 10. Cut the flesh into small cubes.
- 11. Drizzle the apple cubes with lemon juice.
- 12. Put the apple cubes and apple juice into a pot.
- 13. Cook the apples for about 5 minutes until they are soft.
- 14. Season the apple compote to taste with cinnamon and sugar.
- 15. Carefully unmold the cooled pudding onto plates.
- 16. Serve the pudding together with the warm apple compote.
- 17. Garnish the dish with apple slices, fresh mint leaves, and a dusting of powdered sugar.
