🍰 Citrus Semolina Pudding with Berry Quark

Ingredients
- 375 ml Milk
- zested peel and juice 1 lemon
- 40 g semolina
- 1 egg yolk
- 1 packet vanilla sugar
- 2 tsp liquid honey
- 500 g berries
- 125 g quark cream
- some liquid honey
- lemon balm (for garnish)
Instructions
- 1. Heat the milk together with the lemon zest in a pot until it boils.
- 2. Stir the semolina into the hot milk.
- 3. Let the mixture swell for 3 to 4 minutes until it thickens.
- 4. Whisk the egg yolks with the lemon juice in a separate bowl.
- 5. Add the vanilla sugar and honey to the egg yolk and lemon juice mixture.
- 6. Stir this sweetening mixture into the cooked semolina.
- 7. Allow the pudding to cool down while stirring occasionally.
- 8. Wash the berries and remove any stems or unripe parts.
- 9. Cut the strawberries into smaller pieces.
- 10. Gently fold the cream quark into the cooled pudding mixture.
- 11. Layer the semolina pudding and the fresh berries alternately into tall glasses.
- 12. Drizzle the dessert with a little honey at the end.
- 13. Garnish the dish with fresh lemon balm and serve.
